We are all busy and need to eat in a hurry more often than not. Fast food gets old really quick, so we gathered up some of our office favorite recipes that are quick and easy for you to prepare!
Beth’s Crock Pot Meals:
Just put meatballs in a crockpot with pasta sauce on low the morning before you head out. Make some pasta when you get home and now you have a quick spaghetti and meatballs.
Put beef roast or pot roast in a crockpot with a packet of onion soup mix, water, bay leaf and some garlic salt on high.
Shonzi’s Cheesy Chicken Enchiladas:
1 can creamy of chicken soup
1/2 cup sour cream
1 can green chiles
1 teaspoon ground cumin
2 shredded chicken breasts
1 package of Colby and/or Monterey Jack cheese
10 flour tortillas
Combine creamy chicken soup, sour cream, chiles and ground cumin. Spread over the tortillas and then spread the chicken and cheese on top. Roll them up and place into a cake pan. Top them with the rest of the cheese and any left over soup/sour cream mixture you may have. Bake in the oven for 35 minutes at 350 degrees.
Ali’s BBQ Chicken Pizza:
2 boxes of Jiffy pizza dough mix
1 bottle of bbq sauce
2 chicken breasts
1 package of mozzarella cheese
Start by making the Jiffy pizza dough and spreading it across a cookie sheet. Spread half the bottle of bbq across the pizza dough. Add shredded chicken as desired and pour the rest of the bbq sauce on top. Sprinkle the mozzarella cheese on top. Follow the directions for the pizza dough and bake until dough is golden brown.
